Roast chicken with Rosemary and Garlic Past
Food today after missing a long time. Change to a western together. I then want to eat. To see how this recipe is delicious or distasteful.
Ingredient
¼ cup fresh rosemary leaves, finely chopped
5 juniper berries
2 garlic cloves, chopped
½ teaspoon fine sea salt or coarse kosher salt
3 whole fresh rosemary sprigs
4 teaspoons olive oil
1 whole chicken, backbone and neck removed
6 tomatoes cut half crosswise
4 potatoes, Sliced lengthwise
4 Whole garlic
Olive oil,salt,pepper
Preparation
Combine chopped rosemary and next 4 ingredients in mortar and crush with pestle until coarse paste from. Mix in olive oil
Rinse chicken and pat dry .Rub 1 teaspoon herb mixture over bone side of chicken.
Turn over skin side up. Loosen skin from breast and thigh meat rub remaining herb mixture over meat under skin. Rub any remaining herb mixture on outside of chicken
Place rosemary sprigs in a big ceramic or glass baking dish. Place chicken skin side up atop rosemary spring in dish
Cover with plastic wrap and chill. Let stand at room temperature 1 hour before roasting
Position rack in center of oven and preheat to 250 C . Mix tomatoes, garlic, potatoes and olive oil, season with salt and pepper. Place around chicken. Roast chicken uncovered until the juice from the thickest part of thigh is clear of blood, about 1 ½ hours. Transfer chicken to platter and serve.
